Disappearing Crab Dip

6 oz. Crab
a little diced onion
1 to 1 ½ cups mayonnaise
1 can artichoke bottoms, minced (large unmarinated)
1 cup parmesan cheese

Mix all ingredients together. Broil just to brown top—or serve cold. Serve with crackers or chips, stuff in baked potatoes for a main dish (or tomatoes or cooked artichokes) or, for fancy hors d’ oeuvres when the brass is aboard, stuff into mushroom caps and/or artichoke bottoms and broil until golden. No broiler? Lightly sauté mushroom caps and fill with dip—warm or cold.

Artichoke Dip

1 cup mayonnaise
1 cup fresh grated parmesan cheese
1 cup (1 can) artichokes (not marinated)

Mix together in pan over medium heat until bubbly and cheese is melted. Serve with bread or crackers.
