BAKING POWDER BISCUITS

Plain old home type biscuits can be fried in a skillet with a top to contain the heat.  They just don’t rise quite as high as they might in the oven.

2 cups flour
4 teaspoons baking powder
½ teaspoon salt
½ teaspoon cream of tartar
2 teaspoons sugar
½ cup shortening
2/3 cup milk

Mix together dry ingredients, cut in shortening and then add milk all at once. Stir until dough follows fork around bowl. Turn out on floured counter, knead gently for just a minute. Pat or roll with a glass to ½ inch thick and cut with a glass into rounds. Melt some butter in a skillet over medium heat, add biscuits and cover. When golden brown, turn and cover again until done.
